Sticky lemon chicken

This wee gem I found in a low cholesterol cookbook and has since become a favourite in the Greedy household.

A word of warning though, when cooking nicely in the oven, don’t pop to the pub and forget about it. It will shrivel and burn. Who knew.


4 x chicken thighs (boned and skinned)
2 x lemons
1 x tbsp of runny honey
4 x garlic cloves
1 tbsp olive oil
2 sprigs of rosemary


Heat oven to 180/160 fan/gas 4. Mix honey, olive oil, lemon juice, rosemary and garlic (you can leave the skin on) in a baking dish. Add the empty lemon shells. Throw in the chicken and put in oven for 30 mins or until cooked.

Serve with roast potatoes. And don’t forget to try the lemon shells too.

Cals = 400 cals aprox (without the potatoes)
