Lazy brunch

It’s hard to beat a good Sunday brunch. With a hangover it leaves you feeling almost human again, without you feel quite virtuous and deserving of the yummy goodness. This recipe works both ways.

Ingredients

2 x large(ish) potatoes cut into chunks (or a handful of smaller potatoes halved)
1/2 chorizo ring (or if you’re feeling really hungry, throw in the lot)
1 x red onion, sliced
1-2 green chillies (depending on how hot you like it)
A good glug of olive oil
1 – 2tsp smoked paprkia (again, depending on taste)
Pinch of pepper
2 x eggs

Preparation

Boil the potatoes until just soft. Meanwhile pan-fry the red onion in a little oil. Add the chorizo, chilli and cooked potatoes to the pan with some more oil and the paprika. Fry for 2-3 mins.

In a separate pan, fry the eggs.

Divide the potato/chorizo mix between two plates. Top with a fried egg and a sprinkle of black pepper. Serve.
