A yummy healthy meal that’s easy to rustle up as a mid-week treat.
100g puy lentils
1 chicken stock cube
4 x chicken things, sliced
1/2 tsp garam masala
2 x courgettes, sliced
1 x garlic clove, crushed
1/2 small bunch of corriander, chopped
1/2 lemon, juiced
75ml natural yoghurt
1tsp mint sauce
Simmer the lentils with the stock cube in enough water to cover. Once tender, drain.
Toss the chicken with half the oil and garam masala. Toss the courgette with the remaining oil and garlic. Season.
Griddled the chicken and lentils. Toss the lentils with the chicken, courgette, coriander and lemon juice. Mix the yoghurt and mint sauce and drizzle over the top.
