When I first met The Thirsty Manc, I thought that he was lovely. He held open doors, walked on the outside of the road (something about a sword arm?) called when he said he would and was generally an all round nice man.
Being a somewhat messed up 30 something with a string of broken relationships behind me it had been a long time since I had dated a properly nice man and so I decided to give him a chance. A week after we first met he invited me round for dinner and the deal was done.
Never forgetting the way he won over my heart (belly) he continues to cook for me and this morning he fed me my most favourite meal of the day, breakfast (in true Hobbit fashion I’m also fond of second breakfast but that’s a tale for another day).
- 2 tbsp olive oil
- 4 large mushrooms
- 4 slices good-quality thick cooked ham
- 4 eggs
- Toast to serve
Heat oven to 220C/fan 200C/gas 7. Drizzle a little of the olive oil over the base of a ceramic baking dish, then pop in the mushrooms. Drizzle the mushrooms with the remaining oil and season. Bake for 15 mins until soft, then remove from the oven. Tuck the ham slices around the mushrooms to create little pockets. Crack the eggs into the pockets, then return to the oven for 10 mins until the egg white is set and the yolk is still a little runny. Serve scooped straight from the dish. We served with oaty bread. His with Marmite, mine with marmalade. Both went perfectly.
